First, most farming in what is now Isreal was livestock grazing (i.e. the importance of sheep in The Bible, who can survive and prosper on poor forage in dry climates). Pigs were not allowed by kosher rules, and cows and horses only do well in areas wet enough to grow large amounts of grass. This, combined with the primitive state of animal-driven tools (no iron plows, horse collars, etc), meant that vegetable and grain production was almost entirely done by hand with hand tools, and was only a supplement to livestock and considerable hunter-gatherer activity.
