I would not recommend saying you are sensitive during a job interview. I would research the company and try to say something that applies to the job description. In job interviews the employer is typically looking for someone they can relate to and work easily with. Saying you are sensitive, though it is not necessarily a bad characteristic, might make you appear to be difficult to work with.
You should always make the weakness sound positive i.e:
"My weakness, is that I tend to put alot of pressure on myself, to get things done"
