After many attempts I found the method in the madness.
The key must be in and turned as far as it will go without starting the engine.
Hold down the menu button, scroll to 'set time'
Set hour, minutes, date, scroll all the way to the end then press menu for changes to be saved.
Now when you start the engine the clock settings should remain as you set them.
make sure your battery and all connections are secure - most of the time the clock resets due to a loss of power from the car's battery due to a corroded terminal.
