you don't, necessarily. For all crops, including trees, if someone ELSE harvests for you, you get a large crop. If you harvest yourself, you get a small crop. You get paid more for the large crops than the small ones. Some people choose not to harvest trees AT ALL. Fruit on trees does not go bad like crops planted in fields do. And fruit generally doesn't sell for as much per crop as most other things. Because of this, some people choose to not harvest, so that they will have the colorful fruit always visible. Some also like to wait until most or all of their trees have fruit before harvesting, so they may not harvest them sometimes, and then do them all together later. If someone chooses to harvest their own trees, it is probably because they either 1) don't know they'd get paid better otherwise or 2) only have a few trees ready, and don't want to bother finding someone to harvest for them for a very small job.
