It looks like it's a rim braked bike, which pretty much kills your idea of switching to MTB (26") wheels, as it would put the brakes out of reach for the rims.

And sticking a suspension fork (which is taller) on it will change the geometry, and you might not like the handling any more.

On top of that, buying bike parts are much more expensive than buying complete bikes, so it'll be fairly expensive if you want a decent fork.

Luckily there is a kind of MTB called 29er, which has the same rim size as your bike (assumming it's a 622 / 28"), so you should be able to get some beefier tires for your bike .

What you also could do is to get a MTB sus fork and a MTB (26") front wheel. It'll look quite silly but it will get you front sus, keep your brakes working and not mess too much with your geometry and handling - if you get a short travel fork.

Your best bet though is to find someone who has a MTB but is looking for something more suited for road use and simply swap bikes with him/her.
