Yes, it is safe because horses of any color may be bred with horses of any other color. It does not matter. Any horse can be bred to any horse as long as the two breeds are of similar size. Frankly, a gray Lipizzaner may be bred to a dun mustang as long as they are of similar sizes.

If you mean Station bred as in the type of horse bred in New Zealand, then yes they can make good jumpers. They may be limited in how high they can jump due to their stock horse conformation, but they should make good lower to mid level jumpers with the correct training.
American Saddlebreds typically live the same lifespan as other horse breeds, 20 to 35 years. Some may live longer and some may not. Lifespan is affected by health and how well the horse is taken care of.

Where the mare foals determines the foal's status as a state bred, however, each registry and state are somewhat different. If the mare foals in a state where she is not entered into a state bred program but foals in the state where the stallion stands the foal may be a state bred. The foal may not be a state bred in some states if she is not in the state and registered as a state bred before a certain date. So...a foal could be born in Virginia (which would show on the foal's papers) but the foal might not be able to participate in any state bred programs because the sire or dam's status does not meet state criteria.
Her due date is June 18, but she may not calve until after or before then.
