there are many possibilities. If you had your hot water heater replaced or fixed a water line then it could be air inside your water pipes and should go away after a while. you could have air still inside your water heater tank and when you first run hot water out of a fixture it could from flow bleed into your hot water pipe. If you think it isn't caused by air then your fixture can be the problem either your valve seal is loose or your aerator is bad. If you can find out either its air or water then it would easier to trouble shoot.

That depends on how far away is the fixture requiring hot water as a tankless has no return circulation thus your using a lot of water that cools on longer runs. It also would depend on the fixture units required ( GPM max and min flow)

Go from the top of your hot water tank and make your line go to every fixture and after last fixture go back to the tank and connect back into pump, make sure you install a check valve on line at pump
It's probably not the faucet. It could be that there's an obstruction in the hot water side of the fixture, but it's more likely that the hot water isn't getting to the fixture in the first place. The easiest thing to check is that the hot water valve at the wall under the sink is on.
To install a new fixture to replace the one that was removed reconnect the two hot wires together and then reconnect the two neutral wires together. Place the two wires from the new fixture to the corresponding wire colours that you just spliced together. This wiring should be down stream from the light switch. When the switch is turned on the new fixture should light. If this is not the scenario of your question then more information needs to be given.
