in a separately excited generator the field coils are excited from a separate source like a dc battery may be or any other small generator. They are self starting generators.

I would expect a voltage in both coils of wire.Note that, if the two coils are connected, the voltages (and corresponding currents) in the coils can interact. Also, if the two coils are NOT connected, they can STILL interact, since a current will produce its own magnetic field.
The number of coils in a wire affects the strength of the magnetic field. More coils create a stronger magnetic field, while fewer coils create a weaker magnetic field.
You have a seperately excited generator and then you have a shunt generator which has the field winding in parallel with the armature terminals. In DC machines a separately excited generator could be run as a shunt generator provided the field winding is designed to work on the generated voltage. A separately excited alternator needs a DC supply for the field winding. In car alternators that is taken from the main winding via a rectifier and a voltage regulator.
field coils generally refer to the electromagnetic coils on the stator ( the stationary part of an electric motor ). these generate the magnetic field(s) necessary to put the rotor ( the rotating part of the motor ) into motion.
This is in the wiring, the armature(s) field coils, etc, by the way if DC it would have permanent ( fixed) field magnets, not field coils. ac motors have Field coils, not to be confused with Field Amperage or Primary Coils- the latter being the (heart) of a transformer, consult Audels or similar technical shop manuals.
The difference between a separately excited DC generator and a Shunt DC generator is that for a separately excited Dc generator , the excitation field winding is supplied by an external source different from that supplying the armature while for shunt generator, the excitation field windind is connected in series with the armature and supplied by a single source.
Adding more coils will make the magnetic field stronger. Magnetic field increases.
