So this is basic math and deduction that I used to come up with this answer. The average person eats 4 pounds of food per day according to Google. Divide that by 3 meals to get 1.34 pounds per meal. Multiply 1.34 by 100 people and you get 134 pounds of carnitas for 100 people for 1 meal If your only serving carnitas. If your serving with side dishes then divide 134 by number of side dishes to get a somewhat better ball park number
