Mise-en place is a french cooking term wich means preperation, to get ready, so that you have no suprises or panics when the first order lands in your kitchen, it would include preparing anything which would take along time to cook such as roasting chicken or beef, washing and peeling veg, making stock, soup and sauces, defrosting frozen food, making apple pie etc, it would even include none food stuff like gathering your pots, pans, plates, knives etc. so everything you need is ready and your service goes like clock work, no one is kept waiting for a meal and your the best Chef in the land.
