Cells divide using the blueprint of their DNA code to create two copies identical to the parent cell. The process involves the unzipping of the DNA in the nucleus using various enzymes know as DNA Helicases. From here the cell has two single stranded DNA polymers that are complementary to one another. The single strands serve as a template by which a complementary set of base pairs and is directed and "stitched" back up by the enzyme DNA polymerase. The base pairing lines up the complement directed by the enzyme and the phosphate groups on the bases react to form a completed strand. So in summary the double strand of the parent cell splits into two single strands, these provide the code to direct molecules to their complement and the reaction of phosphate groups joins up the backbone and voila you now how have 2 double strands.
The process from here in human eukaryotic cells involves the parent cell preparing to split into two new cells and then actually doing it, each will have a full DNA set outlined by the process in the previous paragraph. This phase (in a nut shell) known as cytokinesis involves preparing and splitting the various organelles and other cellular components. Both animal cells and plant cells produce new cells by Mitosis, but at the "Telophase" stage (where the cell actually splits) they split differently. A cleavage furrow forms on the animal cell and it splits. For the plant cell, a cell plate forms and the cell splits.
