During the distillation process, sulfuric gas is emitted into the ethyl alcohol vapor. Copper reacts with the sulfur, creating Copper Sulfide, which gets created on the inside of the copper boiler. Since copper is a metal, it is also easily molded and a great conductor of heat. The copper tube needs to stay cold to condense the etyhl alcohol vapor back into liquid form.
