One major advantage that I have found is that, in being forced to read labels VERY closely for traces of gluten, you really get a sense of what that product is made of. I have stopped eating a lot of foods, even foods without gluten in them, because when reading the label the majority of the ingredients were chemicals I couldn't pronounce.Plus - to be completely safe, it requires cooking from scratch using fresh ingredients that you know are not contaminated, so the food does taste better (if you can cook!). I'd still prefer to be able to enjoy the same meals at the same restaurants and parties as my friends though.
