You don't, when the game was first released the rumor was that when you played co-op mode on nazi Zombies and you died, then you could turn on your remaining comrades and "zombie" attck them. This was either never the case or it was removed in one of the patches because I have played all modes with all different settings and there is no ability to become a zombie.
