There were two main strategies: 1. Dig dykes and ditches in the path of the siege tower so that it cannot approach the walls until the obstacle is cleared. 2. Heavy artillery. Use some sort of catapult to throw rocks at the tower. If it gets close enough it might be possible to set fire to it with flaming arrows or simply by throwing torches.

A portcullis is part of a castle - the grid of stout wooden beams which blocks an entrance-way when it is lowered into position. The prevents attackers from entering, and allow defends to fire arrows at their assailants.
