As long as you like really, but I would only freeze very hard cheeses.

Yes, although it will affect the texture slightly, you certainly can freeze it.

I would recommend shredding the cheese first, then putting it into airtight ziploc bags, making sure the air has been entirely removed to guard against frostburn.

Cheddar and mozzerella cheeses normally do very well in the freezer for a few months, as frozen Pizza makers have discovered over the years. :) The only thing I would look out for is when thawing, make sure any excess moisture from the freezing process does not soak into the cheese, making it soggy. Dumping the cheese onto a couple paper towels right after thawing usually fixes that problem, letting the towels soak up any excess moisture.

I really wouldn't recommend it, but if you have to, separate it out and indivdually wrap portions in cling film. Then freeze in a bag.

Frozen cheese is best thawed at room temperature or in the fridge. You can microwave it to boost it if you're in a hurry, but it may get a little too melted and runny around the edges.
