You can do this on Xbox.com or you console. For Xbox.com go to my Xbox and click on account. On the Console go to My Xbox and click on your profile and choose profile to update it.
If you mean how do you create a profile then you must create an account on the console. Then you can go to your dashboard to create the profile
Your xbox profile will be set as auto sign in when you created the account. You can change this so when you turn on your xbox, you will have to manually sign in to your account.

You can't if you have an other xbox account. I tried already but I can't because I locked myself out of my Xbox cause I didn't remember the password so you have to make a new xbox account and you don't get to have all you're saved data.
