The best way would be to grate the egg plant on the large side of a block grater, then place the grated eggplant in a colander with a small weight on top to remove as much of the water content as possible. (Otherwise you'll end up with soggy imitation ground beef). Use this as you would regular ground beef, however it will probably require a shorter cooking time.
