First buy the freshest ingredients available and eat the same day.

6 oz fresh sole, cut into bite size pieces

3 large shrimp, sliced in half

3 oz freshly cooked octopus, sliced thinly

Any other seafood you prefer

Juice from 6 key limes

2 oz red onion sliced very thin

1 habanero pepper, diced finely

Salt and ice

Mix together the seafood in a glass bowl, season with salt and lime juice. Mix well. Add the diced peppers, to your taste, and the red onion slices.

Toss together, drain of the juice (tigers milk) and serve separately in a small glass with camote (sweet potato) and choclo (corn)
