It's best to use fresh apricots if you can find them, and making jam from them is pretty easy, and really tasty. Buy a box of Sure Jell pectin and follow the recipe for apricot jam under the cooked jam recipes. Don't try making freezer jam with fresh apricots, I tried it once and it was a complete failure! Since canned apricots are most likely canned in a sugar syrup, I think you could try cooking them in a saucepan with perhaps slightly less sugar than called for with fresh apricots and boil them down until they seem, well, jammy. (I'm just guessing at how they'd turn out, but I think it could work) They'll cook faster than fresh apricots, and may come out slightly mushy if overcooked, so you'll want to watch them carefully.
