Whenever you disconnect the battery for several minutes then you will reset the PCM (computer).
It sounds more like you have a dirty throttle body based on your description of the problem. If you disconnected the battery when you changed the thermostat housing (most times it is impossible to change it without removing the alternator.....that bottom bolt!!!!! dang!!!) the PCM resets.
The difference is it had learned to run with a dirty throttle body. Now, after the reset, it provides running parameters for a new or clean throttle body. Problem is that the throttle body is probably dirty after several years running. The changes are slow and the computer modifies it's running parameters to maintain the trucks performance through a learning process.
Long story short: disconnect battery, remove throttle body, clean the backside of it and be careful of the sharp edge on the body where the butterfly seals - razor sharp!
sounds like a bad thermostat even though it is replaced
did you use the right anti-freeze or you may have a bad fan/fan switch

If the electric cooling fan(s) are not coming on that may be the problem.

Borrow, rent or buy a code scanner to figure out what the computer has detected.

Sounds like your thermostat is done for. The water in the hoses is probably heating up from being close to the hot engine. This continued to happen to me after i replaced the thermostat twice thinking maybe i had bought a bad thermostat turns out it was the heater core. Both the front and back were pluged.
