It means it taste like smoke is coming from it: I might be wrong :P
The same thing as if you get high. It just tastes nasty. If i were you i'd smoke it instead of eating it its gross eating it.
Every oil has a smoking temperature/burn point. But if it was only when you put the chicken in it could just be the water evaporating as steam...or your chicken burning :O)

It all depends on the type of chicken. Chicken Quarters are the norm here in Texas and we smoke them for 3 hours at 225-250 degrees. Every hour baste them with a oil or butter mixture and enjoy with a piece of bread and some pinto beans :)
