Two chief reasons :
low mass = low gravitational attraction.
no magnetic field around Mars ... thus solar wind strips air, so water evaporates faster, and water molecules are also subject to solar wind erosion.
All the water evaporated. Mars is not a very hot place but the atmosphere is thin and the boiling point of water is quite low when the pressure is low. Mars is not very massive so its gravity field was not strong enough to retain the water, or most of the atmosphere. To make it worse the atmosphere is 95% carbon dioxide which would have trapped the Sun's heat.
Mars is believed to have some ice beneath its surface. During the Martian summer some of that ice may melt and briefly flow over the surface before boiling away in the low-pressure atmosphere.
Well it disappeared because it is too cold on mars so it froze and formed the polar ice caps.

As Mars has cooled, its core has solidified and its geodynamo stopped. The loss of Mars' magnetic field allowed more solar energy to reach the surface. That solar radiation heat dissipated the surface water and atmosphere. Also, because Mars' gravitational field is not as strong as earth's, it was much easier for atoms and molecules at the top of the atmosphere to escape to space. Over millions of years this process led to the loss of most of Mars' atmosphere.
Mars lost its water (or it all froze) fairly recently . . . about 1 million years ago.
