There are a number of things that changed in both England and France in the middle ages.
First off, there was an increase in personal freedom as serfs were largely liberated in both places, largely as a result of the Black Plague and the premium it put on people who could work in agriculture.
There was an increase in landholdings, as more and more people came to own land, especially members of the lower nobility.
There was a large increase in the size and power of the middle class.
There was the development of local culture, art, architecture, music, and literature, especially in vernacular languages.
A number of inventions and developments improved architecture.
The countries developed stronger centralized governments and became more independent of each other.
Roads improved.
Literacy improved.
Schools opened.
