A lot of cowboys didn't have families - they were very young, single men who worked as cowboys until they found a nice woman to marry and settle down with. Otherwise, it depended on their job. If they were on a cattle drive, they wouldn't be home for months. If they were working on a ranch, they'd be home every night unless they were out riding the fences checking for broken spots, in which case they'd camp out until they got all the way around.

This was necessary due to the lack of fences and long distances to cover. The Mexicans/Spanish contributed a lot of riding and roping skills to cowboys. The modern American Cowboy really started to develop after the Civil War. As young men returned home they needed a way to make money. Lots of cattle had been let go or escaped from farms during the war. These men had to develop skills to round the cattle up and brand them so they could sell them. Texas is really the birth place of the American Cowboy because of this.
