Europeans also took advantage of the new gunpowder weapons. gunpowder technology came from china, but Europeans developed the technology into a major instrument of war. For instance, cannon fire could break down castle walls and rip through knights armor. These new weapons could easily defeat knights. Over the next 300 years, the nature of warfare would change dramatically.

Today's weapons are different from those of the Middle Ages for the same reason that we ride in cars instead of carts. Things change.
To change your weapon you would use the SHIFT button.
You can change the armour color but you cant change the type of armour you get. The type of class you pick is the type of armour you have to wear.
The medieval "arms race" between defensive armour and offensive missile weapons such as arrows was very simlar to the modern arms race between armoured vehicles and anti-tank weapons; as one becomes better, the other must change in order to keep ahead. Initially, knights wore only soft padding beneath a coat of mail (a hauberk); the mail protected against cutting weapons such as axes and swords while the padded linen gambeson beneath absorbed the impact of blunt weapons. Neither was much use against armour-piercing arrowheads called bodkins - very long, narrow, square-section points which would burst apart the links in mail and penetrate the padding beneath. Helmets at first left the face exposed, but experience during the first few crusades against Saracen horse archers quickly led to enclosed helmets at the end of the 12th century. Eventually (during the late 13th and into the 14th centuries) the introduction of sections of hardened leather, coats of small pieces of riveted plates (a "coat of plates") or thin plate armour and better helmets meant that long bodkin points had little chance of penetration - they buckled on impact with plate armour. The answer was to make those same points much shorter so they could not buckle. These new bodkin arrowheads could now penetrate thin plate armour, as demonstrated by English archers at Poitiers, Crecy and Agincourt against mounted French knights. Armour became thicker and better shaped, with fluted surfaces to deflect arrows; this made it extremely heavy. The introduction of gunpowder effectively made armour of all kinds obsolete, since artillery and hand-held guns could penetrate any body armour at reasonably long distances. By the late 1400s armour was reserved only for tournaments and to show wealth and status, since its defensive function had ceased. The links below take you to images of medieval armour, showing its development over time:
