The battle of Quebec lead to the fall of New France to the British because Quebec was vital to New Frances defense and the British did a surprise attack on them and the British won and Quebec had surrendered to the British.
It was a let down for New France because they lost some of their land and had to give it to the British. It went down hill from there.

As statement of fact, the British Fleet had to weight anchor for Britain in October 1759 leaving the British troops no other alternative than to live in a largely ruined town (Quebec) with limited stock of salt and provision, surrounded by a hostile
country and enemy troops, and no possibility to collect supply during the awful Canadian winter.
That was the very real factor which led to the final downfall of New France.
