Nobody knows the exact answer to this question, but we do know the approximate answer.

In Middle English the name Robert was frequently shortened to Rob. Because there were so many Roberts in the village, they were distinguished by using rhymes for Rob. Common variants were Cob (and Cobber), Dob(and Dobbin), Hob, Lob, Nob, Poband Tob, as well as Robin.

There is no record that any person at that time was addressed as Bob, but presumably this version was derived in the same way.
