For dogs the AKC puts out a book that describes all pure breed dogs, giving history of the breed,physical traits, and other information. This book is updated frequently, it comes in hardback and can be ordered directly from AKC. I imagine you could also find it at local library. And I believe that the AKC website may also have this information.
I am not sure about cats but I would think that the CFA would also have material for the different cat breeds.

Well, for example say the father was a labrador and the mother was a Poodle the puppy would turn out a labradoodle which is a cross between a labrador and a poodle.
