You didn't say what kind of light which would have been a good clue. If a fluorescent it could be a bad tube or bulb, a bad starter or a bad ballast. If an incandescent light could be a loose connection or a disconnected filament that is making intermittent contact due to vibrations.
If this is a dusk-to-dawn security light, the flickering could be caused by ambient or reflected light striking the cds mounted behind a small lens on the (side of most) cabinet. This causes the light to turn off, the reflected light (perhaps combined with ambient) is reduced the light turns back on and the cycle repeats. On my lamp, the light stays on for 6 - 10 seconds before flickering off and back on under these circumstances. You can check if this is the cause by sticking some black electrical tape over the lens - light will stop flickering if this is the problem. Good luck, Dr. Emmett Brown
It depends on the lighting fixture and the layout of your kitchen, since most of the work in a kitchen is "task oriented" the wattage should be the same as for reading. To efficiently light a kitchen there should be several sources of light, at least 100 watt or equivalent (from each source), depending on the type of bulbs, would be my recommendation.
