This behaviour has also most probably been positively reinforced, by you while he does that and furthermore, the mere scent ans sound of the mice is a reward in itself.Thus, this hunting behaviour is a self reinforced behaviour that is impossible to stop, as the mice are still there and the dog's instinct to catch vermin, will not go away.

Get rid of the mice. You have a great dog.
