They didn't. They got killed. And it wasn't "just" jews. Gipsies, communists and gay people too. And pretty much everyone who wasn't "Aryan". They all got killed. The ones that remained were rescued by the Allies.

It was not a question of time, most had to report to a collection point to be sent to the camps, there was no lack of opportunity to escape. The problem was that there was no where to escape to.
