They have a special filter inside the canister. This filter is made with a drying agent called desicant that removes the moisture from the air after it's delivered from the compressor and before it enters the primary air tank.
Air will compress under pressure, hydraulic brake fluid doesn't. Air in the system will give you a spongy peddle because of that.
