Chameleons have chromatophores (Chrom=colour, Phores=cells) which have two types of pigments: one black (melanin,in our skins!!) and another one, of various colors. The colour and patterns are changed under the control of nerves or hormones(adrenaline secreted by the adrenal gland and hormones of the hypophysis-pituitary gland). As releasing hormones and neural control require an energy investment, the chameleons usually change colour to hide from predators or as a stress response Check out the related link, its the best i could find!
