Our skin stretches as we grow, but a hard shell can't stretch. When a crab grows too big for it's shell, it gets rid of it. The new shell underneath is soft at first, but soon hardens. a crab may do this as many as 20 times in it's life.
they grow like us, when they get older their body size grows.

Why are some mud crabs empty?

Crabs have a shell (actually a carapace) that is solid and rigid and it doesn't grow with the crab so every so often then split it open and crawl out of it to grow a slightly bigger one. What you are finding then are the empty discarded carapaces of growing crabs.

Do hermit crabs need a shell?

Yes! It is very important that a hermit crab has a shell, it is used to protect their bodies. It also saves them from getting eaten by other animals! Though sometimes, you find hermit crabs that haven't found a shell that isn't the right size or shape, and instead of a shell, they might carry things like bottle tops. Usually, hermit crabs try to avoid situations like this but, when they urgently need to change into another shell because their current shell is too small, it will be unavoidable.
