Well it's because, if you kick/squeeze a horse they know to trot on, if you sit normally they know to walk, they don't stand at that point because your not pulling on the reins. hope it helps xx
i dont know exactly how old but to sell or buy horses you have to be at riding level 2 and to pass the test for riding level 2 you have to have 10 days of senority.
technically all horses are walking horses you just have to know how to ride them. You must know how to make them run, trot, and walk

You can be about 12or over to get an equestrian job. As long as you know what you are doing and you aren't scared by much horse behaviour. If it's groom work you are looking for then you need to know how to muck out, groom, how to handle horses etc. but if it's riding/ exercising horses you are looking for then you have to be able to walk, trot, canter, jump... not so much galloping, unless it's a Thoroughbred. But you can really be any age over 12...
