A horse just slows down or speeds up, just like you would. A horse knows when to change gaits by when its ridder tells it to, or, if nobody is ridding it, the horse changes gait when it wants to.

they should learn themselves, but if they dont when catering incourage the to gallop or if your not confident then try them on a lunge. :)
