If you are using iOS 9, simply double click the Home button (the circular button at the bottom of the phone) when you're phone is unlocked. The various windows and apps you have open will appear. Swipe left and right to browse through the apps. Swipe up to close a page. Here is a helpful page from Apple's website explaining this process: support.apple.com/en-gb/HT202070.
I noticed you've categorized this question under iPhone 3GS. If you're using an older operating system on this phone, you still double click the home button when the phone is unlocked. The icons of your open apps will appear at the bottom of the screen. Simply click the red minus circle in the top left corner of the app icons to close them.
