If you had it on sleep mode, than you just click the top button or the round button and it should go on. If it doesn't then you probably had it completely off. When it is completely off, you hold down the top button for a few seconds until the Apple icon appears in the center of the screen. To completely shut your iPod touch, hold down the top button for a few seconds until a bar says, "Slide to power off." To just make it sleep*, click the top button.
*Sleep mode does draw some of the battery, but if you will be turning it back on shortly, you don't have to worry about it.
