Parrots don't actually understand the human voice. But they are the only animals that can replicate it so closely. They just hear the word(s) alot. They are trained that, when somebody says a word they know and they repeat it, good feelings follow.

They don't exactly know what "Hello," means (for example) but they know to say it when somebody else does.
