They choose species that are not know for attacking people. Only certain shark species are 'man-eaters'. Many species avoid people if at all possible. Additionally - divers are trained to behave 'sympathetically' in the presence of sharks - so as not to show aggression. Most animals only attack people because they feel threatened.
