Conifers will do a better job than most as they are evergreen. deciduous trees (those that drop leaves in the winter) are not so good It also depends on how close trees are , whether they form a hedge or are planted at woodland spacing. If you stand directly behind a large tree yes it will definitely block the wind e.g oak tree with a girth bigger than a person is wide.
