To start customizing the Microsoft Management Console (MMC), first, open it by typing "mmc" in the Run dialog (Windows + R) or the Start menu. Once it's open, you can add snap-ins by going to the "File" menu and selecting "Add/Remove Snap-in." Choose the desired snap-ins from the list, configure them as needed, and then save your customized console layout for future use.

Go to the Start button and click it. When it opens up move the arrow over to the right side of the menu in a blank area and right click the mouse button. Click on properties when you see the menu pop up. A window will open up with tabs at the top. Click on the tab for Start Menu. After clicking the tab you'll see to right a button that says Customize. Click on that and the rest is up to you.

Log off will already be on your start menu, on windows 7 there will be a button that says shutdown, next to the button will be an arrow, from there you can select the option to logoff.
