Select all of the rows you want to aphabetize. It is assumed you organized your data with each entry's information in a row. Go to the menu bar and click Data --> Sort. A window will come up called Sort. Organize it by the column, and whether ascending (A-Z) or descending (Z-A). You can organize by secondary column and third column too. Click OK.
Omit the apostrophe then alphabetize it.
I'm not sure you can (easily) short of writing a macro to do it. Have you considered writing, for example, 'The Thing' as 'Thing, The'? This should work.
