i would try something like...I wanted to find a position that was more challenging, or I felt my experience was not used in my last role. Maybe something like that?

what if the Interviewer ask you again, What if you think this job wont be challenging for you? You'll quit again? big No No,
You goal was to be hired, they say don't lie but I suggest to lie,
create a scenario that is not the truth, Not the type of scenario they will ever check.
If you say you've been hospitalized, You fail ( NOT FIT TO WORK ).
If you say salary ain't enough ( it should be fake negotiable ).
If you say not challenging enough ( The Interviewer will ask you what if questions).
