Today you can mostly use the english word "Single" (in german it is only used as a noun, so it's always capitalized):

"Sie ist (ein) Single."

It's also possible to say "Singlefrau" (Frau = woman).

"Sie ist eine Singlefrau."

"oldfashioned" german words/terms could be "alleinstehende Frau" or "ledige Frau".

As a matter of fact Germans started using the terms date and dating too. If you are trying to say "I have a date" you can use "ich habe eine Verabredung/ein Date", if you mean more like "we are dating" Germans would rather say "wir sind zusammen" (we are together) oder "wir sind ein Paar" (we are a couple). Teenagers would probably just say "wir daten".
