There are a wide range of simple recipes for candied yams. One that was found included 4 cups chopped sweet potatoes, 1 jar caramel topping, 1/8 cup brown sugar, 1/2 cup butter and one cup of marshmallows. Place the potatoes in a 8 x 8 baking dish with potatoes, caramel sauce then sprinkle with sugar and dot with butter. Bake at 325 for 30 minutes then add the marshmallows and return to the oven for 5 to 10 minutes.

You can bake the ham and yams in the oven at the same time. If you are baking the ham for several hours, put the yams in about an hour before the ham is finished. Or put the yams in at the same time as the ham, and test them by piercing with a fork after about 45 minutes.
I would start with about a cup; but I recommend using brown sugar instead.
I like to oven roast yams to bring out the natural sugars in the yam and carmelize them. Leave the yams whole, prick a few holes in the skin to allow steam to escape, wrap each one in tin foil, then roast in the oven at 400 degrees under tender to the center. (Cooking times will vary depending on the size of the yam, you can always finish off stragglers -- without the tin foil -- in the microwave). Add a small pat of butter, and serve. Some people also like to use honey, maple syrup, or even toasted marshmallows to sweeten up their yams.
CANDIED SWEET POTATOES OR YAMS 6 large bright orange sweet potatoes 1 lb. dark brown sugar 1 stick of butter 2 cups of miniature marshmallows 1/4 cup of white sugar 2 teaspoons of salt Wash and peel potatoes. Chunk potatoes into 2 inch disks. Put potatoes in a pan and cover with water. Add 2 teaspoons of salt and 1/4 cup of white sugar to the potatoes and water. Cover. Boil until potatoes are fork tender (approximately 30 minutes). Drain potatoes. Put potatoes in a baking dish and sprinkle with brown sugar. Dot potatoes with butter. Bake for 20 minutes in 350 degree oven. Sprinkle with marshmallows. Return to oven and bake until marshmallows are brown.
for making candied yams I use about 3 tablespoons per pound of yams (sweet potatoes).
I am thinking you are Australian for some reason. In the Western countries pumpkin is generally used for pumpkin pie, pudding or pumpkin soup. Squash and yams would be a good choice in place of pumpkin. There are many varieties of squash. Acorn Squash: Cut in half. Turn meaty side down and steam until tender. Take out of oven and place on rack until cool and all moisture is gone. Mix butter, brown sugar, small pieces of apples, a few raisins, salt and pepper and fill cavities. You can keep this up to 3 - 4 days in your fridge and serve to guests. Yams are excellent for hormone replacement (estrogen.) These are best steamed and can be eaten in chunks, or, mashed, put in a dish, covered with small marshmallows or a little brown sugar and butter and reheated. Yams will stay in the fridge for quite sometime.
My advise is to stay away from the brown yams, but it's your salad.
Unless one is baking a sweet potato (also called yams in the U.S.) one does not use sugar in baking potatoes. Because potatoes usually are baked whole and unpeeled, butter, salt and often sour cream are added after baking.
