To blanch ( or blanching , or blenching ) is actually a term describing a process of food preparation , where the food substance , whether it be vegetable or fruit , is plunged into boiling water , removed after a brief time period , then plunged into ice water or under cold running water ( shocked ) to halt the cooking process . By Blanching , you can remove the skin on some fruits or nuts and enhance the flavor of some vegetables .

To blanch broccoli, you simply boil it in water for around 2 minutes. Then you immediately transfer it to a bowl of icy water, so it stops the cooking process.
