starting on the low ground side, dig a trench the full length and after pouring the concrete to almost ground level, start with your first block and as it heads into the trench, come back one half of a block and again pour the concrete to near ground level and lay another block and continue doing this until you reach the end. You will find that on your first course you will have only one block on one end and several on the other depending on how much out of level the ground may be. Hope this helps.
I assume you want to make a section of the wall in model form, one way to make the blocks for your wall is with "sculpy" clay, but that can get a little expensive, another way is to make sheets of plaster about 1" thick and carve it to look like a block wall, have a picture so you have something to guide you. You can as long as you anchor it properly. Depending on how high the wood section is going to be, you would either bolt it down to the top of the block or extend the posts part way down the face of the wall and anchor it that way.

Apparently the first wall ever build in China was the wall of Qi (not Qin!), build in 400 bc. Although it didn't look the same way like we know the wall from tv or pictures. It was more like a mass of dirt.
I suggest you use a Permacrib Retaining wall. They have a an adaptation to give the wall a completely closed face
