As it says on the screen right before the update starts, you can turn of your Wii mid-update (and any time, by the way) by holding down the power button for four seconds.
go to Wii system update and update it there.
First, select system settings on the Wii U menu. Then, scroll to the 'system update' button and select it.
You have to have some sort of wifi in order to do that. Once you connect your Wii to the wifi, you can go into your system options and do a system update from there.
No unfortunatly there is no way to update it and play Wii games with that system. The wireless controlers work to differently from the hardware of the old system.
Have you tried updating manually? Go into System Settings and go to page 3 and click on "Wii System Update."
Go into wii options (bottom left of the home menu) and somewhere in there you will be able to update it (not sure where, but it's quite easy to find your way round). Usually, when there is an update, you will get a message in the wii messaging system bit (bottom right) saying so. To update your wii, it must be connected to the internet.

There is no Action Replay for the Wii anymore. It has been discontinued because Nintendo blocked it from working on the Wii with a firmware update.
